Grilled Chicken with Mango Avocado Relish


I constantly struggle with chicken breast on the grill. I am not usually thinking ahead long enough to marinate the chicken before dinner, and as a result I have ended up with a lot of dry chicken breast. I have tried a lot of different ways to cook chicken breast, along with a lot of different seasonings and toppings. I finally have a combination that I think is worth posting. Again, I use both a charcoal and a pellet grill for this recipe.


Ingredients

  • 2 thick cut chicken breasts

  • 1 tbsp Hardcore Carnivore Red Seasoning

  • 1 mango

  • 1 avocado

  • 1 jalapeno

  • 1 lime

  • 1/4 cup cilantro

  • Salt

  • Chili powder

  • 1/8 cup Cotija cheese, grated

Instructions

  1. Set up charcoal grill for direct grilling with grill grates in place. Stabilize at high heat of 450° to 500°

  2. Set up pellet grill at 250°

  3. Season chicken breast with Hardcore Carnivore Red

  4. Pat rub into chicken breasts

  5. Place chicken breasts on the charcoal grill, directly on the grill grates, and press down on the chicken to form grill marks

  6. Sear for a minute and a half, and then rotate breasts 90 degrees and press down on the chicken

  7. Sear for another minute and a half

  8. Flip the chicken breasts and repeat steps 5 through 7

  9. After searing (6 minutes total) transfer chicken breasts to pellet grill set at 250°

  10. Insert a probe into the chicken breasts

  11. Close lid and cook until internal temp reaches 165° exactly

  12. Remove chicken from grill once temperature reaches 165°

Mango Avocado Relish

  1. Slice open mango and remove the pit. Turn mango inside out and remove the skin. Place on a cutting board

  2. Slice mango into small cubes and place in a large bowl

  3. Slice avocado in half and remove pit. Using a spoon scoop the inside of the avocado out and place on cutting board

  4. Slice avocado into small cubes and add to the bowl

  5. Slice jalapeno in half and remove the stem and seeds

  6. Finely chop jalapeno and add to the bowl

  7. Finely chop cilantro and add to the bowl

  8. Slice lime in half and squeeze juice into the bowl. Depending on the size, this might take 1 1/2 limes. Use enough juice to coat the ingredients

  9. Season with salt and chili powder to taste

  10. Mix all contents with a spoon

  11. Place relish on top of each chicken breast

  12. Garnish with grated cotija cheese

This chicken has some amazing flavors. You can also slice up the chicken and easily make some awesome tacos with the relish and cotija cheese.
